Instructions:
Place the haggis in a large saucepan of water and boil it for 2 hours until it's cooked through.
While the haggis is boiling, peel the potatoes and turnips, then boil them separately for about 20 minutes until they are soft.
In a saucepan, melt the butter and then add the milk.
After the potatoes and turnips are cooked, drain them, and add half of the milk and butter mixture to the potatoes and the other half to the turnips. Mash them until they are creamy.
Add a pinch of nutmeg, salt, and pepper to the mashed 'neeps and tatties' and mix well.
Place the haggis in a serving dish.
Serve the haggis alongside the creamy 'neeps and tatties.'

To make Spaghetti Carbonara, boil the spaghetti until al dente, cook the guanciale until crispy, mix eggs, cheese, and pepper in a separate bowl, drain the cooked spaghetti and mix it with the egg mixture, then add the crispy guanciale.
It serves about 4 people.
It is usually served hot, right after preparation.

Ingredients (serves 4):
400g spaghetti
200g guanciale (cured pork cheek)
3 large eggs
150g Pecorino Romano cheese

Instructions:
Boil the spaghetti in a large pot of salted water until it's al dente. Drain and set aside.
While the spaghetti is cooking, cut the guanciale into small pieces and cook it in a skillet until it becomes crispy. Remove from heat and set it aside.
In a bowl, whisk the eggs, grated Pecorino Romano cheese, and a generous amount of freshly ground black pepper.
Add the drained spaghetti to the egg mixture and toss quickly to coat the pasta with the creamy sauce.
Finally, add the crispy guanciale and toss again.
