It's red, healthy, tasty, smells of childhood and Ukranian pride. Borsch is easily the best Ukranian dish that I've tasted.
Borsch is a certain type of soup that will leave you full and beaming with happiness after a big meal. Beetroot gives it a beautiful red tint, cabbage, tomatoes and potatoes give it the nutrition, carrots and onion finish its unique taste.
In the past, Borsch would be served during winter to feed and warm the whole family, especially on special occasions like Rizdvo - Christmas. It's got a rich taste and it's always served hot. Usually served alongside Okroshka, Borsch becomes the most nutritious vegetable-based dish.
I remember my mother cooking Borsch when I was little. I can recognise its smell to this day, it's unforgettable. I'm sure that every Ukranian has fond memories of tasting Borsch.
It's such a simple but iconic dish, served across all of Ukraine to this day.
