If you hadn't left the knife in water, it wouldn't have got rusty.

(Если бы ты не оставил нож в воде, он бы не заржавел.)

3. They spent a year in England, so they learnt to speak English quite well.

 If they hadn't spent a year in England, they wouldn't have learnt to speak English quite well.

(Если бы они не провели год в Англии, они бы не научились достаточно хорошо говорить по-английски.)

4. It rained, so we were obliged to stay indoors.

 If it hadn't rained, we shouldn't have been obliged to stay indoors. - Внимание! Это предложение звучит очень старомодно (как из советского учебника 1960-х годов издания). Нормальные люди сейчас сказали бы так:

If it hadn't rained, we wouldn't have been had to stay indoors.

(Если бы не дождь, нам бы не пришлось сидеть дома.)

5. Why didn't you watch the milk? It boiled over.

If you had watched the milk, it wouldn't have boiled over.

(Если бы ты следил за молоком, оно бы не выкипело.)

6. A huge rock blocked the path, so we had to go all the way round.

If a huge rock hadn't blocked the path, we wouldn't have had to go all the way round.

(Если бы дорогу/тропу не преградил огромный камень, нам бы не пришлось идти в обход.)

7. The explorers had no radio with them, so they could not signal for help when the storm broke out.

If the explorers had had radio with them, they could have signalled for help when the storm broke out.

(Если бы у исследователей было с собой радио, они могли бы подать сигнал о помощи, когда разразится шторм.)

8. There wasn't even the slightest wind, so the sailboat lay motionless on the smooth sea.

If there had been even the slightest wind, the sailboat wouldn't have lain motionless on the smooth sea.

(Если бы был хоть малейший ветерок, парусник не покоился бы неподвижно на глади моря.)

Объяснение:

В образце дан третий тип условных предложений (Conditional 3).

В таких предложениях в условной части (после if) используется Past Perfect (had + 3-я форма глагола), а в основной части — would have + 3-я форма глагола.

Примечание: в старых учебниках встречается конструкция с should после местоимений 1-го лица I и we (как в вашем образце), но это давно устаревшее правило. Видимо, задание взято из старого учебника, как я и написала выше.
