My favourite soup is Solyanka. My mum cooks it and I usually help her. Solyanka is a traditional Russian soup, very delicious, thick and spicy. It is a meat lover’s dream and especially nice on cold winter days. It can be cooked in different variations with beef, pork, chicken, sausage and pickles. I’m going to describe my mother’s recipe of Solyanka. She doesn’t add potatoes, by the way.All kinds of meat products (ham, smoked sausage, bacon, boiled sausage, salami) – 800 g

Tomato paste – 3 tablespoons

Capers – 2 tablespoons (optional)

Peppercorns to your taste

Sunflower oil – 3 tablespoons

Boil the beef in 3 litres of water for 1,5 (one and a half) hour on medium heat.

Wash the beef kidneys, cut them in halves, remove fat, skin and vessels. Leave in cold water for 15 minutes. Pour out the water, then boil the kidneys in fresh water for 5 minutes. Change the water again and let them boil for 1 hour on medium heat.

Now it’s time to fry vegetables. Pour the oil into a frying pan. Add the chopped onion and fry until golden. Stir in the tomato paste. Remove the seeds from the salted cucumbers, cut them in filaments and put into the frying pan. Fry the vegetables together for 3-4 min. Pour in some hot broth, stir in well, reduce the heat to medium and continue cooking for 5 min.

Take the boiled beef out of the broth, remove the bone and chop the meat. Strain the broth, pour in the pickle brine and bring to a boil.

Slice the boiled kidneys thinly, cut the meat products in filaments. Now put into the broth the fried-up stuff, the meat and kidneys, meat products. Add capers, peppercorns and 1 bay leaf. Bring the soup to a boil and simmer slowly for 10 min. Solyanka is ready!

Serve with sour cream, parsley, several olives and a slice of lemon. Enjoy your meal!
