Способы разрыхления бездрожжевого теста. Химический способ. Для этого способа используются химические разрыхлители: NaHCO3 — питьевая сода и (NH4J2CO3 — углекислый аммоний. Под действием температуры они разлагаются на газообразные продукты, разрыхляющие тесто.
