Способ субстантивация,один из видов конверсии-это способ словообразования,переход разных частей речи в разряд существительных.
Лишнее слово капустный-переход прилагательного в существительное невозможен.Остальные слова переходят в разряд существительного:
горячий чай-подали горячее
,прошлый век-вспомнить прошлое,
душевой шланг-пойти в душевую,
блинный торт-посетить блинную,
родной край-мои родные,
хороший вкус- ты мой хороший,
мороженое мясо-десерт мороженое,
слепой случай-стоит слепой,
объяснительный список- написать объяснительную.
