Потому что у их состава поверхностное натяжение высокое (благодаря мыльному раствору и другим компонентам), выдерживающее дуновение воздуха. Поэтому воздух наполняет пленку, а когда раствор все-таки отрывается от основы, то схлопывается в шар, так как это идеальная форма, при которой жидкость стремится к наименьшему поверхностному натяжению.
